Spelled couscous salad with mackerel
Salad of spelled couscous, grilled vegetables, mackerel and fresh mint and parsley.

Bring the water with the half bouillon tablet to the boil and stir until the tablet is dissolved.

Put the couscous with the ras el hanout in a bowl, pour over the hot stock and stir. Leave for 10 minutes and stir with a fork.

In the meantime, heat the oil in a stir frying pan the frozen grilled vegetables for 8 minutes on medium heat.

Remove the leaves from the sprigs of fresh mint and cut finely. Slice the parsley. Mix the vegetables and herbs through the couscous.

Heat a frying pan with non-stick coating and fry the mackerel fillets for 3 min. On the skin side. Turn around and bake for another 1 min.

Serve the spelled couscous salad with the mackerel.
