Spice salmon with ricotta and raw ham

Preheat the oven to 180ºC. Mix the ricotta with the lemon zest, juice, herbs, breadcrumbs and garlic. Season with salt and pepper.

Brush the salmon on one side with this mixture and wrap the raw ham around it. Place on a baking sheet and bake in the oven in about 15 minutes until tender and golden brown.

In the meantime, place the broccoli and to the other baking tray. Drizzle with olive oil and sprinkle with sea salt.

Roast the vegetables (at the same time as the salmon) for about 15 minutes in the oven. In the meantime, prepare the quinoa according to the instructions on the packaging.

Serve the salmon with the roasted broccoli, to and quinoa.
