Grind the avocado, lime juice, yogurt, garlic and oil in a food processor to a smooth mixture.

Add the mint, parsley and basil and mix again briefly.

Season with salt and pepper and add extra olive oil to make the dressing a little thinner.

The dressing can be kept for about 1 week in the refrigerator in a clean, airtight container.
