Directions

  1. Let the chicken come to room temperature. Preheat the oven to 175 ° C.
  2. Finely chop the garlic, parsley and red pepper (without seeds). Halve 1/3 of the oranges and with a teaspoon spoon out the flesh between the fleece. Mix the flesh in a bowl with garlic, red pepper, half of the parsley, some salt and freshly ground pepper.
  3. Spoon half of this mixture with ¼ of the olive oil in the abdominal cavity of the chicken. Insert the abdominal cavity with cocktail sticks. Place the chicken on the back in the roasting pan and spread the rest of the orange mixture over the top of the chicken.
  4. Cut the other oranges with skin each in 4 parts and place around the chicken. Sprinkle the remaining parsley with some freshly ground pepper and drizzle with the remaining olive oil.
  5. Slide the roasting pan into the oven and roast the chicken in 1¼-1½ hours until golden brown and done. Tasty with haricots verts and fried potatoes.
