Mix the flour with the yeast and salt. Pour the water and oil into a well. Knead from the middle to a smooth dough.

Let the dough rise for about 1 hour under a damp tea towel in a bowl in a warm place until the volume has doubled.

Preheat the oven to 225 ° C.

Clean the peppers and cut them into wafer thin rings. Cut the mozzarella and gorgonzola into thin slices. Grate the Grana Padano coarse.

Spread the work surface with flour and roll out the dough into two circles of approx. 30 cm diameter. Let the dough on the edge slightly thicker.

Grease the baking tray (large oven) or two baking trays (regular oven) and place the pizza bases on it. Cover this with the mozzarella, gorgonzola and ricotta.

Sprinkle the Grana Padano, pepper rings and thyme over the pizza.
