Halve the pomegranate. Remove the seeds above a bowl with a teaspoon and collect the juice.

Stir in a cup the oil, orange juice, pomegranate juice, salt and sambal into a dressing.

Cut the shallot into wafer-thin rings.

Peel the avocado, halve and remove the kernel. Cut the flesh into slices.

Mix the shallot rings, avocado and lettuce with the pomegranate seeds and pour in the dressing.
