Peel the potatoes and the parsnip and cut into cubes of three cm.

Peel the apples and cut them into pieces.

Cut the onions.

Heat half the olive oil in the woks and stir in half of the turmeric and all coriander.

Spoon the potatoes and parsnips with salt and pepper and bake for two to three minutes.

Put the apple through and pour half of the water.

Smother everything covered in ten to twelve minutes until tender.

Meanwhile, heat the rest of the olive oil in the frying pan and fry the sausages around brown.

Divide the onion with a teaspoon of turmeric and thyme between the sausages and add the rest of the water.

Let the sausages simmer gently in eight to ten minutes, turning them regularly.

Puree the onion mixture in the blender or in a high bowl with hand blender until a nice gravy.

If necessary, add a dash of water.

Stamp the potato with parsnip and apple into a coarse stew and scoop the arugula through it.

If necessary, season with salt.

Serve the stew with a dimple in the middle and pour the onion gravy into it.
