Let the leg ham come to room temperature. Chop the thyme. Grate and squeeze the lemon. Squeeze the garlic cloves over a wide bowl. Mix in paprika, cumin, honey, thyme, lemon zest, a little lemon juice, half of the olive oil, salt and freshly ground black pepper.

Roll the ham in the bowl around the spice mixture and then rub it well in the ham. Leave the ham in the bowl for 15-30 minutes so that the flavor can pull well into the ham.

Spread the ham just before preparing with the rest of the olive oil and place it in a not too hot place on the barbecue. Roast the ham in 30-40 minutes around until done, turn very regularly.
