Cut small florets of broccoli from the stalk. Peel the stalk with a peeler and cut the stump into cubes. Peel the carrots with a peeler and cut into slices.

Heat the olive oil in a frying pan and fry the strips of ham in two minutes. Put them on a plate. Chop the onion and finely chop the garlic. Fry the onion and garlic gently in the shortening.

Stir in the ras el hanout and add quinoa, broccoli florets and cubes and carrot. Pour 200-250 ml of water and add some salt. Cook the dish gently in 12 minutes. Delicious with a tomato salad.
