Directions

  1. Boil the rice in water with the stock cube. Drain and leave to cool on a large scale until lukewarm. In the meantime, heat 1 tablespoon of oil and fry the chicken breast in about 10 minutes.
  2. Mix the rice with pineapple, corn, spring onions and red pepper. Whisk together the rest of the oil, lime juice and sambal and scoop through the rice salad.
  3. Heat the satay sauce and scoop the fried chicken through. Warm for another 2 minutes. Serve the spicy rice salad with the chicken satay and crumble the emping over it.
