Spicy roasted pumpkin
A tasty recipe. The vegetarian side dish contains the following ingredients: garlic (peeled), sprigs of rosemary, traditional olive oil and fresh pumpkin.

Preheat the oven to 180 ºC.

Put the coriander, fennel and the large pinch of salt in a mortar and grind.

Add the oregano, garlic, rosemary and a pinch of pepper and grind to a paste. Mix in the olive oil.

Halve the pumpkin (s). Remove the seeds and the stringy interior and cut off the skin with a sharp knife or peeler.

Cut the pumpkin halves into pieces of approx. 2 cm. Place the pumpkin parts in a roasting pan and add the oil-spice mixture.

Cover well and spread the parts in a single layer.

Roast the pumpkin for 1 hour in the oven or until the pumpkin is soft and sweet and begins to turn crispy around the edges.
