Spicy roulade with figs and blackberries

Preheat the oven to 175 ° C. Melt the butter in a saucepan and stir in the spices and orange zest with a little salt. Rub the roulade all around with this mixture and place the roulade in the roasting tray. Pour the rest of the butter mixture over. Slide the roasting pan in the middle of the oven and roast for 30 minutes. Turn the roulade occasionally.

Wash the figs and cut off the tip. Cross the figs in that direction and insert a tuft of rosemary. Divide the figs and blackberries around the roulade. Insert the meat thermometer into the middle of the roulade. Fry the roulade further in the oven until the thermometer shows 70-75 ° C.

Place the roulade on a shelf and leave covered with aluminum foil for 5-10 minutes. Put the figs on a plate and spoon the blackberries next to it. Keep them warm in the switched off oven.

Stir the orange juice and fondue through the frying pan into the roasting dish. Pour this mixture into a large pan and cook on a high heat in 8-10 minutes until a nice gravy.
