Spicy soy scrambled eggs with toast
Scrambled eggs with carrots, garden peas, chili flakes, chives and soy sauce and a toasted sandwich.

Toast the bread in the toaster. Halve the tomatoes. Heat the oil in a frying pan with non-stick coating and fry the tomatoes for 3 minutes on the cutting edge.

Remove them from the pan and wipe the pan with kitchen paper.

Meanwhile, put the peas in a bowl, pour boiling water over and let stand for 3 minutes. Drain in a colander.

Break the eggs over a bowl and beat with the soy sauce and chilli flakes. Put the egg mixture in the frying pan and cook while stirring over medium heat.

Add the peas and tomatoes, scoop and remove the pan from the heat.

Slice the chives. Divide the egg over the plates and garnish with the chives. Serve with the bread.
