Spicy stir-fry of minced chicken with cucumber and mango
Stir-fried dish of basmati rice, cucumber, mango, shallot, red pepper, minced meat and coriander.

Boil the rice according to the instructions on the package. Meanwhile, halve the cucumbers in the length and remove the seed lists with a spoon.

Cut the flesh into half-sized moons of 1 cm thick.

Peel the mango and cut into cubes of 1 cm. Cut the shallots. Cut the stalk of the red pepper.

Halve the pepper in the length and remove the seed lists with a sharp knife. Slice the flesh finely.

Heat the oil in a wok and fry the minced meat. Add the shallots, red pepper and cucumber and stir-fry for 3 minutes.

Add the mango in the last minute and let it warm up.

Cut the coriander coarsely. Serve the rice with the stir fry and sprinkle with the coriander.
