Spinach stew with mustard chops
A tasty Dutch recipe. The main course contains the following ingredients: meat, crumbly potatoes, ribs, sour apple ((eg gold puret), peeled and in parts), coarse mustard, olive oil and spinach (300 g).

Cook the potatoes for 20-25 minutes with a little salt until done.

Drain them, but keep 2 tablespoons of cooking liquid from the potatoes behind.

Cut the pork chops on the side with a sharp knife.

Fold the pork chops open and put a quarter of the apple pieces in between, brush them with 1 tbsp coarse mustard.

Fold the pork chops again and fix the meat with a cocktail stick.

Rub the meat with salt and (freshly ground) pepper.

Heat 2 tbsp oil in a non-stick pan, fry the chops on high heat on both sides and let them cook over medium heat in 15 min.

Stamp (with a puree masher) the potatoes with the trapped cooking liquid and 4 tbsp olive oil and 1 tbsp mustard until puree.

Season with salt and (freshly ground) pepper.

Stir the fresh spinach through the puree bit by bit..
