Heat the olive oil in a frying pan with non-stick coating and fry the potato slices golden brown and done.

Heat the olive oil in a frying pan and fry the bacon cubes.

Stir in the balsamic vinegar and honey and season with salt and pepper.

Cut the tomatoes into strips. Spread the spinach with the tomato over the plates and spoon the bacon dressing on it. Spoon the potato slices next to it.
