Spinach with pine nuts and yogurt
A nice Turkish recipe. The vegetarian starter contains the following ingredients: spinach, Greek yogurt, garlic, lemon juice, salt, (freshly ground) pepper, red onion, raisins, olive oil, pine nuts and ground cumin (djinten).

Spinach washing and cleaning.

Bring with boiling water to the boil and boil for about 4 minutes.

Drain spinach well in colander and press out moisture.

Put yogurt in bowl.

Peel the garlic and press it over it.

Stir in lemon juice.

Season the yoghurtsauce with salt and pepper.

Peel onion and finely chop.
-
Finely chop the raisins.
-
Finely chop spinach.

Heat oil in pan.

Pine nuts on low heat, shoveling light brown.

Remove from pan.

Place the onion in a pan and gently bake for about 4 minutes.

Add: cumin, raisins, pine nuts and spinach.

Warm gently for approx.

2 minutes with stirring.

Season with salt and pepper.

Reuse spinach in bowl and yogurt sauce over it or create it.

Serve with roasted shawarma sandwiches or sesame rolls..
