Blanch the sprouts. Prick about 5 sprouts on a skewer, brush them with olive oil and grill for about 15 minutes on the barbecue. Turn occasionally.

Meanwhile, make the sauce. Heat the butter and fry the onion glassy. Pour in the vinegar and boil the sauce a little. Add the cream and grind a lot of pepper. Let the sauce simmer gently.

Put the sprout skewers on a shelf. Sprinkle with the parsley and serve warm with the sauce.
