Heat 1 tablespoon of oil in a small wok or frying pan. Pour a ladle of the batter into the pan and turn with the pan so that the batter divides well.

Break 1 egg in the middle of the batter, place a lid on the pan and fry 2-3 minutes until the egg is done. Repeat with the rest of the batter and the eggs (add extra oil if necessary).

In the meantime, heat 1 tablespoon of oil in a second pan and fry the prawns in 4-5 minutes. Add half of the red pepper.

Sprinkle the hoppers with the coriander and the rest of the red pepper. Always invest with 3 shrimps and serve immediately.

Serve the hopper with mango chutney and a green salad.
