Allow the steaks to reach room temperature for at least 30 minutes before preparation.

Heat the butter in a hot frying pan and add the oil, a crushed clove of garlic and the thyme as soon as it stops.

Fry the steak in the hot butter on one side until the meat is discolored halfway down the edge. Then turn over the steak. Carefully tilt the pan and constantly scoop the hot gravy over the meat.

Turn off the heat after 2 minutes, divide the Gorgonzola over the steak and cover the pan with aluminum foil.

Serve the steak on preheated plates.
