Dab the meat dry and sprinkle with salt and pepper. Heat the oil and butter and fry the steaks 2-3 minutes per side. Take them out of the pan and let them rest under aluminum foil.

Fry the shallots in the shortening. Add the mustard, port and 100 ml of water and simmer for 2-3 minutes.

Serve the steak with the mustard-shallot sauce. Garnish with some sprigs of thyme if necessary.

Delicious with mashed potatoes and stewed cranberries with apple and raspberries.
