Directions

  1. Rub the meat with the oil and sprinkle generously freshly ground pepper over it. Heat a frying pan, sprinkle the meat with salt and fry the steaks for 1.5 minutes per side for red, 2-3 minutes per side for rosé or 4 minutes per side for stir-frying. Add the butter halfway through the baking time.
  2. Remove the meat from the pan and let it rest for a while.
  3. Add to the shortening the sour cream, thyme, mustard and possibly a dash of cognac or vieux. Serve the sauce with the steak.
  4. Tasty with broccoli and potatoes.
