Fried cod with beurre noisette

Dab the cod fillets dry with kitchen paper. Sprinkle them with pepper and possibly salt and flour. Shake the excess flour from the fish.

Heat the butter in a frying pan with non-stick coating.

Fry the cod on medium heat for 4 minutes on one side, turn the fish and cook for 3 minutes on the other side.

In the meantime, heat the butter in a saucepan or frying pan with a light-colored base (light metal or white) so that you can properly judge the color of the butter.

The butter will first start bubbling and foaming and then discolouring.

Remove the butter from the fire when it turns golden brown and immediately pour into a fireproof dish.

Stir the capers through the brown butter.

Divide the fish over the plates and spoon the beurre noisette over it. Slice the parsley and sprinkle over it.
