Directions

  1. Heat the olive oil in a large (frying) pan and fry the onion for about 5 minutes. Add the garlic, spices and pumpkin cubes and stir-fry.
  2. Add the tomatoes, cinnamon and 100 ml of water. Season to taste with salt and leave to simmer for about 15 minutes at a low setting.
  3. Add the drained chickpeas and simmer for about 5 minutes. In the meantime, prepare the couscous according to the instructions on the packaging.
  4. Cover the couscous with the butter. Serve the stew with the couscous and Greek yogurt. Sprinkle with the mint.
