Boil the potatoes in a large pan in water with salt in about 20 minutes.
Meanwhile cut the spinach into fine strips.
Heat the olive oil and fry the onions until light brown.
Drain the potatoes and let them dry.
Put them back in the pan and crush them into an airy puree with the milk, fried onions and the oil.
Season with salt and pepper and spoon in the cheese cubes and spinach. Serve immediately.
