Stewed salmon with zucchini salad
A tasty Dutch recipe. The main course contains the following ingredients: fish, lemon, salmon fillet (in 2 equal pieces), liquid margarine, mashed potatoes (chilled, 550 g), zucchini, olive oil with basil (bottle, 250 ml), chives (finely chopped, fresh or frozen) and hazelnuts (coarsely chopped).
Clean lemon bulbs, peel off grated and press fruit.
Season the salt with salt, pepper and some lemon zest and sprinkle 2 tbsp lemon juice over it.
Salmon in margarine and with lid slant on (appetizer) pan in 6-8 min.
Heat mashed potatoes in microwave according to instructions.
Sprinkle or cut courgette in thin slices.
In salad bowl, mix 2 tbsp lemon juice with basil oil, chives and salt and pepper to taste until dressing.
Make zucchini slices through dressing.
Sprinkle hazelnuts over puree.
Serve salmon with puree and zucchini salad..
