Stewed sauerkraut with minced meat and sweet potato
A different-than-different puree with coconut milk and sweet potato.

Put the sauerkraut in a colander and let it drain.

Put the sauerkraut with the water, the vadouvan, the butter and some pepper in a pan. Leave to simmer on the pan over low heat for 15 min.

Meanwhile, peel the sweet potatoes, cut into equal pieces and boil in water with salt, if necessary, for 15 minutes.

In the meantime, heat the oil in a frying pan and fry the minced meat, pepper and salt in 7 minutes.

In the meantime, cut the peppers into rings and cook for 5 minutes with the minced meat. Stir frequently. Slice the chives.

Drain the sweet potato and drain well. Return to the pan and mash the coconut milk to puree.

Mix ⅔ of the chives. Season with pepper.

Divide the puree, sauerkraut and minced meat over the plates and garnish with the rest of the chives.
