Heat the olive oil and fry the meat nicely brown on both sides. Remove the meat from the pan and sprinkle with salt, pepper and paprika.

Then fry the garlic and the white part of the spring onion in the shortening. Add the meat again with the bay leaf, red wine and apricots. Let the meat simmer very gently in 25-30 minutes.

If the sauce is too thin, it can be tied with monthly, zena or all-tie. Sprinkle the rest of the spring onion over the dish before serving.
