Stewed zucchini
Vegetarian Italian dish with zucchini, basil, olive oil, garlic and tomatoes.

Halve the zucchini in the length and scrape out the seeds with a spoon. Cut the halves into slanted slices.

Take the leaf of the basil. Keep half of the basil aside and cut the rest into strips.

Cut the garlic into slices.

Heat the oil in a frying pan and fry the garlic for 1 min.

Add the courgette and cook for 2 minutes. Add the chopped basil and the tomatoes. Season with salt and pepper.

Bring to the boil and simmer for 10 minutes on low heat with the lid on the pan.

Tear the rest of the basil into pieces and sprinkle over the courgette just before serving.
