Stir-fried asparagus and leeks with pork fillet
A tasty Dutch recipe. The main course contains the following ingredients: meat, new potatoes (small), white asparagus, leeks (500 g), parsley (30 g), marinated pork fillets (400 g), (sunflower) oil, curry powder and mustard.

Wash the potatoes.

In a pan of cold water, bring 1 tsp salt and potatoes (with peel) to the boil and cook for 15-20 minutes.

Cast off.

Peel the asparagus thinly.

Remove the bottom if necessary and cut the asparagus diagonally into thin slices.

Clean the leek, cut into rings.

Clean parsley, finely chop.

Heat frying pan and fillet strips for 2 min.

On each side brown boxes.

Heat in wok oil and stir-fry 8 minutes in asparagus, leeks and curry powder.

Mustard, add 1/2 dl warm water and shake briefly.

Add salt and pepper to taste.

Add half of the parsley.

Place potatoes on four plates, cut open and sprinkle with (coarse) salt and the remaining parsley.

Distribute vegetables over plates and add meat..
