Wash the strawberries and pat dry. Remove the crowns from the strawberries and cut 1 cm from the top, this is the hat of Santa.

Place the strawberries with the cutting edge of the crown down on a plate. Keep the tops separate.

Mix the mascarpone and vanilla sugar in a bowl and fill the piping bag with the vanilla mascarpone.
