Stuffed courgettes with rice, minced meat, onion, apricots and cheese.

Directions

  1. Boil the rice according to the instructions on the package.
  2. Halve the courgettes and cut the flesh to a ½ cm from the side of the courgettes (flesh is not used).
  3. Preheat the oven to 200 ° C.
  4. Chop the onion. Heat the oil in a frying pan and fry the minced meat for about 2 minutes. Scoop the onion through and cook for 4 minutes.
  5. Season with salt, pepper and cinnamon. Cut the apricots into strips.
  6. Spoon the rice and apricots through the mince. Fill the courgettes high with the minced rice mixture. Sprinkle the zucchini with the cheese.
  7. Place the courgettes on a baking tray and place in the oven for about 10 minutes until the cheese has melted.
