Heat the oil in a frying pan and gently fry the to and the spring onion for 1 min.

Bake the omelet and golden brown in approx. 3 min.

Cover the omelette with the lettuce or spinach, goat cheese, sunflower seeds and the rest of the to and bunch onion.

Finally sprinkle with some paprika and parsley.
