Stuffed pork rib with artichoke
A tasty recipe. The main course contains the following ingredients: meat, spicy olives (1 dish), pork rib (cut open), Italian garden herbs, olive oil, dry vermouth, tomato cubes (400 g), artichoke hearts ((400 g) and drained).

Preheat the oven to 150 ° C. Chop the olives coarsely.

Place the meat on a cutting board and cut it in length to 2/3. Open the meat and spread the olives evenly over the notch. Put a few sprigs of herbs on it. Tie the meat with kitchen string and sprinkle with salt and pepper.

Heat the oil in a frying pan, roast the meat around golden brown. Pour the vermouth in the pan and add the tomatoes, artichoke hearts and remaining sprigs of herbs. Bring everything to a boil. Place the lid on the pan and place the pan in the middle of the oven. Let the pork rib be cooked for approx. 30 minutes.

Take the pan out of the oven for another 15 minutes. Cut the pork rib into thick slices. Nice with penne.
