Directions

  1. Preheat the oven to 200ºC.
  2. Wrap the sweet potatoes in a piece of aluminum foil and cook them in the oven for about 45 minutes.
  3. Open the top of the foil, cut the potatoes lengthwise and carefully pour them out with a spoon. Crumble the goat's cheese into the sweet potatoes and break the eggs above it. Sprinkle with the spring onions and a pinch of salt.
  4. Bake the potatoes for about 20 minutes in the oven until the protein has solidified and spoon out.
