Stuffed sweet potato with egg
Preheat the oven to 200ºC.
Wrap the sweet potatoes in a piece of aluminum foil and cook them in the oven for about 45 minutes.
Open the top of the foil, cut the potatoes lengthwise and carefully pour them out with a spoon. Crumble the goat's cheese into the sweet potatoes and break the eggs above it. Sprinkle with the spring onions and a pinch of salt.
Bake the potatoes for about 20 minutes in the oven until the protein has solidified and spoon out.
