Directions

  1. Cut the stem and bottom of the courgettes and cut them into 4 pieces each. Cook them for 5 minutes in a pan with water and salt. Allow to cool and drain with a spoon. Slice the flesh finely and keep separate. Halve the tomatoes and hollow them out with a spoon. Keep the seeds and flesh separate.
  2. Preheat the oven to 200 ° C. Heat the oil in a frying pan. Fry the onion on low heat in 5 min. Glassy. Add the mince, the garlic and the thyme and cook over medium heat for 5 minutes. Stir frequently. Add the pulp of the zucchini and the seeds and pulp of the tomato and fry for another 2 minutes. Season with salt and pepper.
  3. Fill the zucchini and the tomato with the minced meat mixture and sprinkle with the breadcrumbs and the Parmesan cheese. Put the vegetables in the baking dish and bake in the oven for 20 minutes.
