Summer rucola stew


A tasty recipe. The main course contains the following ingredients: meat, potatoes (slightly crumbly), smoked bacon cubes, pine nuts (a 95 g), oil, arugula (a 75 g), tomatoes (6 large, in parts) and fresh mint (only the leaves) .

Directions

  1. Cook the potatoes until done and keep 100 ml of cooking water apart.
  2. Fry the bacon for about 8 minutes in a frying pan with non-stick coating until they are brown and crunchy.
  3. Fry the pine nuts in a dry frying pan golden brown, sprinkle with salt and let them cool down on a plate.
  4. Mash the potatoes with the cooking liquid and a tablespoon of oil.
  5. Season with salt and (freshly ground) pepper.
  6. Spoon the bacon and the rocket through the puree.
  7. Season the tomatoes with the rest of the oil, salt, (freshly ground) pepper and coarsely torn mint leaves.
  8. Sprinkle the stew with the pine nuts and serve with the tomato salad..
