Summer salad with tortellini

Boil the tortellini in a pan with plenty of boiling water with salt in 12-14 minutes until al dente.

Remove the green beans and halve them. In another pan, boil the green beans in plenty of boiling water with a little salt in 8-10 minutes until al dente.

Rinse the green beans in a sieve under cold water (so they stay nice and bright green) and let them drain well.

Drain the tortellini in a colander.

Beat in a salad bowl a dressing of the vinegar with the olive oil, the pressed garlic and some salt and freshly ground black pepper.

Spoon the tortellini, green beans, the halved to, the chopped bell peppers and the spring onions into 1 cm pieces. Let the salad stand for fifteen minutes.

Put the lamb's lettuce and rocket through it just before serving.
