Cut the peeled cassava into thick fries.

Cook for 7-9 minutes, drain, rinse cold water and drain.

Marinate the chicken fillet in the soy sauce and season with salt and pepper.

Heat the oil and fry the tomato puree, onion, garlic, trassi and sambal 1-2 minutes.

Add the chicken and stir-fry for 5-6 minutes.

Dab the fries dry and deep-fry in the oil in 3-4 minutes until golden brown.

Put the fries on 4 plates and spread the chicken over it.

Sprinkle with the celeriac and goat's cheese.
