Surinam Brown Beans With Rice
Surinamese kidney beans with rice, sauerkraut bacon, tomato and red pepper.

Chop the onion. Peel the ginger and cut finely. Heat the oil in a large pan and fry the onion and ginger.

Add the sauerkraut bacon and cook for 3-4 minutes.

Cut the tomatoes into cubes. Crumble the bouillon tablet above the pan.

Stir in tomato puree, tomato cubes, sugar, nutmeg and water and let it simmer for 30 minutes on low heat with the lid on the pan.

Meanwhile, cook the rice according to the instructions on the package.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Slice the flesh finely.

Cut the celery fine. Add the pepper, beans and half of the celery to the vegetable seasoning mixture and leave to simmer for another 10 minutes.

Sprinkle the brown beans with the rest of the celery and serve with the rice.
