Sushi balls with avocado and poppy seeds

Prepare the sushi rice according to the instructions on the packaging and leave to cool.

Heat the vinegar with the sugar and a pinch of salt and let cool.

Meanwhile cut the flesh of the avocado and the cucumber into very fine cubes. Mix the cubes in a bowl with the horseradish.

Drizzle the rice with the vinegar dressing and divide into 4 equal portions. Roll balls of rice with the moist hands.

Push the balls between the hands flat and place one quarter of the avocado filling in the middle. Push the rice gently around the filling and roll with a damp hand into a round ball.

Sprinkle the poppy seeds in a deep plate and roll the sushi balls through them. Leave covered in the refrigerator or serve immediately. Tasty with chicken breast and cucumber salad.
