Sweet potato fries with vega burgers
Frites of sweet potato from the oven with vegetarian burgers with spinach, spring onions and mango chutney.

Preheat the oven to 200 ºC.

Peel the sweet potatoes and cut them lengthwise in thick fries. Sprinkle the French fries with the vadouvan and salt if necessary and drizzle with the oil.

Spread over a griddle covered with parchment paper and bake in the oven for about 45 minutes until golden brown and done. Change every 15 min.

Fry the pumpkin-thyme burgers for the last 8 minutes on a grid under the potato chips in the oven.

Put the hamburger buns for the last 4 minutes.

In the meantime, heat the rest of the oil and allow the spinach to shrink in parts.

Put the spinach in a colander and let it drain.

Cut the spring onion into thin rings.

Cut open the buns and spread them in succession with some spinach, a pumpkin burger and the mango chutney.

Sprinkle the French fries with the spring onions and serve with the burgers. Serve the rest of the spinach separately.
