Preheat the oven to 200ºC.

Make a puree of the peeled and boiled sweet potatoes and the knob of butter. Season with salt and pepper.

Beat the egg yolks and grated cheese through them. Beat the egg whites stiffly and spat through the mash.

Spoon over in the (soufflé) baking dish or single dishes and sprinkle with a pinch of cumin powder. Fry the soufflé in the oven for about 30 minutes.
