Heat the strips of lemon peel or rack with the cream, fish stock and 1 tablespoon dill. Leave to boil for 10 minutes. Strain the sauce and reduce until it thickens.

Meanwhile, cook the tagliatelle in water with salt. Drain the pasta and drain well.

Spoon the sauce and 3/4 of the salmon through the pasta. Grind pepper. Garnish with the rest of the salmon and the dill.
