White bean soup with pasta
A tasty Italian recipe. The vegetarian main course contains the following ingredients: dried white beans (pack a 500 g), onion (finely chopped), olive oil, carrot (finely chopped), celeriac (finely chopped), dry white wine, balsamic vinegar, tomato cubes (400 g), vegetable stock (from tablet), pasta (eg tagliatelle or fusilli), parsley (chopped) and ground old cheese (bag of 150 g).

Allow the beans to soak in cold water for at least 12 hours. Then drain and rinse under cold water. Rinse beans in 1 hour and 30 minutes, rinse in colander under cold water and drain.

Fry in oil (3 minutes) in (soup) pan. Add carrot and celeriac and cook for 3 minutes. Add wine, vinegar and tomato cubes. Let it boil for another 5 minutes. Add hot stock. Stir in beans and pasta and simmer for approx. 8 minutes until pasta is al dente. Season to taste with salt and pepper. Soup in four deep plates and sprinkle with parsley and cheese. Delicious with crunchy ciabatta and green olive tapenade.
