Let the meat reach room temperature about 30 minutes before cooking. Cook the potatoes for about 10 minutes and drain them. In the meantime, preheat the oven to 200ºC.

Place the potatoes in a baking dish, drizzle with the olive oil, add the garlic and sprinkle with the thyme, salt and pepper. Fry the potatoes in the oven for about 30 minutes until golden brown.

Cook the broccoli al dente in about 5 minutes. Remove the meat from the marinade and pat dry with kitchen paper.

Heat a grill pan on a high stand and grill the meat around golden brown in about 4 minutes. Sprinkle with salt and pepper and leave to rest under aluminum foil.

Cut the meat into slices and serve with the broccoli and potatoes.
