Heat the olive oil in the pan and fry the cloves of garlic and finely chopped onion.

Add spinach bit by bit.

When all spinach has shrunk, add the bouillon cubes and 4 glasses of water.

Let the soup simmer for 10 minutes, but do not boil! .

Cut the avocado into pieces and add to the soup.

Puree the whole with a hand blender and serve immediately.
