Heat the oil in a frying pan and fry the onions.

Add thyme, pepper and salt and reduce the heat.

Let the onions caramelise in 15 to 20 minutes.

Preheat the oven to 200 degrees Celsius.

Place a sheet of parchment paper on the baking sheet. Roll out the puff pastry and fold the outer edge a little bit to create an upright edge.

Spread the onion mixture over the bottom and then spread it with dates, grapes and bacon strips. Put the cake in the oven for 18 minutes.

Remove the cake and spread the soft goat cheese over it.

Put the cake in the oven for another minute to heat the goat's cheese.
