The pumpkin pie of marieke paalman
Try this pumpkin pie from Marieke Paalman
- 300 gram pumpkin
- 200 gram almond flour
- 2 tablespoon coconut oil
- 2 big egg
- 100 gram chopped walnuts
- 1 teaspoon cinnamon
- 8 cardamom pod
- 1 star anise
- 1 teaspoon ginger powder
- 5 clove
- 2 teaspoon baking powder
- 5 tablespoon honey plus 2 tbsp honey
- 100 gram coconut grater
- 8 tablespoon Greek yoghurt
Preheat the oven to 190 degrees.
Grease an oven dish with a little coconut oil.
Steam or boil the pumpkin until about 25 minutes and let it cool down.
Remove the skins from the cardamom pods. Grind them together with the clove and the star anise to powder in a mortar. Remove the large pieces.
Put the cooled pumpkin, eggs and 5 tablespoons of honey in the food processor and puree the whole.
Mix the flour, baking powder, salt and spices in a bowl.
Add the mixture of pumpkin and the pieces of walnuts.
Put the batter in the tart mold or in a baking dish and put it in the oven for 45 minutes.
While the cake is in the oven, make the topping.
Put the coconut grater and the 2 tablespoons of honey in the food processor and grind to a thick sticky mass.
Stir in the yogurt until it is well mixed.
Spread the topping over the cooled pumpkin pie and let it stiffen in the fridge for an hour.
