Prepare all ingredients and heat a large frying pan with a thick bottom on high heat.

Place the tomatoes, garlic and pepper in the dry pan and roast them until they are scorched, lumpy and soft.

The tomatoes need more time; Remove the garlic and pepper as soon as they are done (after 5-10 min.).

Remove the stem from the pepper and the skin of the garlic and mash both in the mortar until puree. Add the tomatoes and work through them.

Slice the coriander. Chop the onion and rinse with cold water. Squeeze out the lime.

Add the coriander, the onion and the lime juice. Taste and season the salsa.
